"Campus Queen" Monster Cookies



Ingredients:
1 cup uncooked oats
1/2 cup whole wheat flour
1/4 cup white flour
1 1/2 tsp baking powder
1/8 tsp salt
1 Tbsp butter, softened
1 egg white
1 tsp vanilla
1/4 cup "Better N" Peanut Butter (can be found at Harp's or Target but you can sub with regular, creamy PB)
1/2 cup brown sugar
1/4 cup almond milk (can sub regular milk)
2 Tbsp mini M&M's
2 Tbsp mini chocolate chips
additional M&M's and chocolate chips for garnish

Directions:
 1.) In a medium bowl, whisk oats, flours, baking powder and salt; set aside.
2.)In another medium bowl, mix butter, egg white, vanilla and peanut butter until creamy. Add in brown sugar and milk and mix.
3.)Slowly incorporate flour mixture into wet ingredient bowl and mix until combined. 
4.)Fold in 2 Tbsp each of M&M's and chocolate chips.
5.)Chill dough for 30 minutes to an hour.
6.)When ready to bake, preheat oven to 325 degrees and line a cookie sheet with parchment paper. 
7.)Drop approximately 15-16 dough balls onto sheet and slightly flatten to form cookie shape with fingers. (Cookies will not spread because of the very little amount butter so whatever shape the dough is in will be the shape to cookie will be!) 
8.)Strategically place a few M&M's and chocolate chips on top of each cookie for pretty finish.
9.)Bake for 10-12 minutes.  Allow to cool slightly before transferring.  Enjoy!
