Biscoff Banana Bread
Ingredients:
2 cups flour (white, whole wheat or I recommend 1 cup of each)
1/2 cup sugar
1tsp baking soda
1/4 tsp salt
1/2 stick of butter or margarine
1/2 cup biscoff cookie spread
1/4 cup nonfat plain greek yogurt
2 brown bananas fully mashed
1 egg plus 2 egg whites
1 tsp vanilla
7 Tbsp buttermilk (add 1 tsp of vinegar to 6 Tbsp milk and let sit for 5 min)
Mix ins:
1 cup white chocolate chips tossed in 1 tsp of flour
Directions:
1.) Preheat oven to 350 degrees; spray and flour your loaf pan.
2.) In a medium bowl, cream butter, sugar and biscoff in a bowl until light and fluffy. Blend in yogurt, bananas, eggs, vanilla and milk.
3.) In a separate bowl, whisk flour, baking soda and salt. Slowly stir dry ingredients into wet bowl just until mixture is fully combined and careful not to over-mix. Fold in chocolate chips (and any other mix-ins you like)
4.) Pour batter into loaf pan, smooth top and bake for atleast 60 minutes or until knife inserted in center comes out clean. Enjoy!!
